  17. Take 300 grams Meat (whatever you like)
  18. Prepare 1 medium Potato
  19. Take 1/2 medium Carrot
  20. Make ready 1 dash of each Salt, pepper
  21. Make ready 1 Olive oil for stir frying

Once the roux is a light brown caramel color, add the curry powder, garam masala and white pepper. Add the equal amount of wheat flour and stir constantly. Keep stirring so that the roux will not stick to the pan. Homemade Japanese curry roux Melt butter in a sauce pan on low heat.

  9. Turn the heat down to low, and simmer without a lid for 30 minutes. Stir it up from the bottom occasionally to prevent burning.
  10. Heat olive oil in a frying pan. Add the meat → potato → carrot in that order. Sauté after each addition and season lightly with salt and pepper. When the potatoes have turned translucent, it's good.
  11. When the simmered curry sauce is shiny and thickened, add meat, potato and carrot. When the sauce comes to a boil, turn the heat down to low and simmer for 15 minutes.
  12. When the additional ingredients are tender and the curry is nicely thickened, it's done.
  13. The curry is delicious when freshly made, but it may be a bit floury. If you let it sit for half a day or overnight, the flouriness and flavor will settle down and the curry will be even more delicious.
