To get started with this recipe, we have to prepare a few ingredients. You can have persian saffron rice using 7 ingredients and 10 steps. Here is how you can achieve that.

The ingredients needed to make Persian Saffron Rice:
  1. Get 1 cup Basmati rice
  2. Get 1/2 teaspoon Saffron
  3. Take 2 tbsp warm milk
  4. Prepare 1-2 tbsp butter or ghee
  5. Prepare 4-5 tbsp caramelized onion
  6. Get 1/4 teaspoon salt or to taste
  7. Get 2 cups Veg Stock/Broth
Instructions to make Persian Saffron Rice:
  1. Clean and soak rice in water for 30 minutes. Drain excess water and keep it aside
  2. Soak saffron in warm milk for 2 hours or more for intense saffron colour
  3. Heat butter or ghee in a deep vessel
  4. Add rice and saute for 2-4 minutes
  5. Add veg broth and saffron milk. Mix well
  6. Add salt as required, since broth contains salt, adjust accordingly
  7. Cover and cook over low heat until done. Do not disturb rice or keep opening lid in between. This is important. Switch off and let it rest for 5 minutes
  8. Gently fluff rice with fork
  9. Add caramelized onions and mix well
  10. Serve rice hot with any gravy
