This pineapple fried rice recipe was inspired by a meal at Sweet Basil in Norman, Oklahoma over the Thai-style sweet and spicy pineapple fried rice with red bell pepper, cashews and cilantro. Made a little addition to the mix by stir frying the veges with some brown sugar and we used some. Pineapple fried rice is different from other fried rice because it is the only fried rice cooked with fruits and curry powder.   7. Prepare 1 tbsp Garlic minced

  9. Prepare 1/4 tbsp Cashewnuts chopped
  10. Take 1 tbsp Soya sauce
  11. Get to taste Salt
  12. Prepare to taste Red chilli powder
  13. Take to taste Black pepper
  14. Take 2 tbsp Lemon juice
  15. Take 1/4 cup Water
  16. Make ready 3-4 Green chilli
  17. Get 4 tbsp Coriander leaves
  18. Make ready Ingredients for Mixed vegetable raita :
  19. Prepare 1 Carrot large (peeled, washed & grated)
  20. Prepare 1 Cucumber medium size (peeled, washed, grated & squeez out the juice)
  21. Get 3 Snake cucumber (tarr) (washed & chopped)
  22. Take 1 Tomato medium size (washed and chopped)
  23. Make ready 1 Onion chopped
  24. Prepare to taste Salt
  25. Take to taste Black pepper powder
  26. Prepare 5 cups Unsour Curd

Make this easy fried rice at home—it's as good or better than take-out fried rice! This classic Thai pineapple fried rice is truly mouthwatering. Golden grains of rice jeweled with chunks of juicy pineapple, cashews, and currants. Stew pineapple pieces with a little sugar till soft.

Steps to make Pineapple fried rice with mixed vegetable raita:

  2. Heat oil in a wok/kadai. Add chopped pineapple. Cook it on high for 3-4 min. Keep on stirring after intervals.
  3. Add capsicum, mix it and cook it on high for 3-4 min. Now add garlic, green chilli and onion. Mix well. Cook on high till light brown. Now add raisins and cashewnuts. Mix well. Cook on high for 3-4 min. Add salt, red chilli powder and black pepper powder. Mix well on slow flame. Add soya sauce. Mix well.
  4. Add water and again mix well on slow flame. Add boiled rice. Mix very well so that the rice gets well coated with pineapple mixture.
  5. Add lemon juice, mix well. Add coriander leaves and mix well. Transfer to a serving plate. Serve hot with raita.
  6. Method for Raita :
  7. Take a bowl. Add curd and whisk properly, so that no lumps should remain. It should be smooth. Now add in all the given ingredients and mix well.
  8. Transfer it to a serving bowl. Cover it and keep it in fridge for 1/2 hr. Serve with rice, pulav, biryani or the way you like it.

Add this to whisked yogurt with chopped green chillies and salt. You can also temper mustard seeds and Raita is a delicious Indian side that has a cooling effect.
