  1. Prepare 1-2 lbs ground Turkey
  2. Make ready 1/2 large onion diced
  3. Make ready 1 tbsp olive oil for sautéing
  4. Take 1 1/2 cups par boiled rice
  5. Make ready 3-4 cups chicken broth or mushroom broth
  6. Take 1 bag frozen peas
  7. Get 2 cups diced mushrooms
  8. Take 1 can healthy request cream of mushroom soup
  9. Get 1/2 bag fat free shredded cheddar cheese
  10. Take Salt and pepper to taste and 1 tbsp garlic powder
  11. Take Serve with Parmesan cheese
Steps to make Cubby’s skillet:
  1. Brown the ground Turkey and onion in the olive oil. Add seasoning.
  2. Once cooked through, add the broth and mushrooms. Bring to a boil and add rice. Cook for 18 min til absorbed and stir often
  3. Once rice is cooked through and add a little more broth if needed and add the cheese and cream of mushroom. Stir til melted and fold in steamed peas.
  4. Serve with Parmesan cheese
