Torta (or tortilla) is a Filipino omelette made with ground beef. My mother makes them into individual size patties, which I called mini hamburgers when I was younger. My mother-in-law makes them into big servings, almost like a frittata. This recipe can be used for either, but I'm listing directions for the smaller portions.

Heat taco meat in a non-stick pan. Use beef stock, tomato puree, or salsa to help retain moisture if desired. Slowly render fat from bacon in a saute pan. Ground beef - We used giniling (Tagalog word for ground or minced meat) na baka (beef), but ground pork is also equally used.

Steps to make Ground Beef Torta:
  1. Heat taco meat in a non-stick pan. Use beef stock, tomato puree, or salsa to help retain moisture if desired.
  2. Slowly render fat from bacon in a saute pan. Remove bacon. Eat it or top the torta!
  3. Add refried beans and heat slowly until hot.
  4. Combine water, vinegar, sugar, and salt in a small sauce pot or shallow saute pan. Bring to a boil. Add onions. Boil for one minute. Remove pot from heat. Super quick pickled red onions!
  5. Slice bread and layer as follows. Beans, meat, and then avocado slices. Toast in a pre-heated panini press sprayed with non-stick cooking spray until bread is crispy.
  6. Variations; Salsa, sauteed onions, peppers, garlic, goat cheese, queso fresco, cotija, Chihuahua cheese, tomatoes, lettuce, cilantro

Slowly render fat from bacon in a saute pan. Ground beef - We used giniling (Tagalog word for ground or minced meat) na baka (beef), but ground pork is also equally used. Use lean beef or replace it with ground turkey or chicken for lower calories dish. Fish sauce - helps to season the torta and add a deep umami flavor. If you don't like fish sauce or might struggle to find a use for it, you can replace it with soy sauce.
