Smothered Chicken - perfectly tender and juicy fried chicken that is shallow-braised in a savory creamy gravy on a stovetop. Smothered chicken is basically semi-fried chicken and pan gravy. After watching Anita Baker prepare her Smothered Chicken on Oprah, I decided to try hers. A soul food that looks delicious and has a unique, excellent flavor.

To get started with this particular recipe, we must first prepare a few components. You can cook smothered chicken using 10 ingredients and 8 steps. Here is how you cook it.

The ingredients needed to make Smothered chicken:
  1. Prepare package chicken breast flattened with mallet
  2. Prepare package mushrooms chopped
  3. Take 2 bell peppered julienned
  4. Prepare 2 sliced onions
  5. Prepare package smoked bacon
  6. Take 2 cloves minced garlic
  7. Make ready 3-4 chopped roma tomatoe
  8. Take 1 ball of mozzarella cheese
  9. Prepare olive oil
  10. Prepare 1/4 cup white wine (optional)

Transfer to a plate and set. Try my Smothered Chicken and Gravy recipe! Don't forget the rice or mashed potatoes! I only used boneless, skinless chicken because that's all I had.

Instructions to make Smothered chicken:
  1. Make bacon in skillet, remove and drain extra oil from pan, but not all..
  2. Season and sautee flattened chicken breast in pan with bacon grease and maybe a tablespoon of olive oil or butter…. you could also add about 1/4 cup of white wine to the pan once chicken is browned.
  3. Remove chicken and add sliced onion, bell pepper, mushroom. Season with salt and pepper.
  4. Place chicken in oven safe pan. Add cooked mushrooms, bell peppers, onions, and garlic.
  5. Next add chopped bacon pieces and tomatoes
  6. Add grated cheese on top
  7. Preheat: Bake 400° for 15-25 minutes until cheese is melted and bubbly
  8. (flatten out chicken breast with soft side of mallet to your liking) you may need to cut in half.**********

Don't forget the rice or mashed potatoes! I only used boneless, skinless chicken because that's all I had. Smothered chicken is a real-deal Southern staple.
