After watching Anita Baker prepare her Smothered Chicken on Oprah, I decided to try hers. A soul food that looks delicious and has a unique, excellent flavor.

  5. Take 1 can sliced Mushrooms (4.5 oz, drained)
  6. Get 1 cup Mexican cheese blend (shredded)
  7. Make ready 1/2 cup Green onions (chopped)
  8. Make ready 1/2 cup Bacon (cooked, crumbled)

Transfer to a plate and set. Try my Smothered Chicken and Gravy recipe! Don't forget the rice or mashed potatoes! I only used boneless, skinless chicken because that's all I had.

Instructions to make Smothered Chicken:
  1. Flatten chicken to about a 1/4 inch thickness. Sprinkle with desired amount of seasoned salt and garlic powder.
  2. In a large skillet over medium heat, add the vegatable oil until hot. Add chicken and brown for about 4 minutes, then turn over.
  3. Top chicken with mushrooms, cheese, onions, and bacon. Cover and cook until juices run clear and cheese is melted (about 4 minutes). Note that I omitted bacon this time due to using it in both of my side dishes.
