  10. Get 1 1/2 cup Shredded sharp reduced fat cheddar cheese
  11. Get 4 jalapeno peppers seeded and chopped
  12. Get 1/2 cup Chopped pecans toasted

Pour the excess butter from the custard cup into the beaten egg. Stir in the dark corn syrup and vanilla. Blend dry pudding mix with corn syrup;gradually add evaporated milk and egg, stirring to blend well. I was hoping for a bit more of a pudding texture.

Instructions to make Pecan corn.pudding:
  1. In large bowl combine cornmeal and making soda.in a small bowl whisk the eggs, and butter.add cream style corn, corn snd onions. Stir into dry ingredients just until moistened.
  2. Pour half the mixture into a 13 in x 9 in baking dish coated with cooking spray. Sprinkle with cheese and jalapenos. Top with remaining batter sprinkle with pecans.
  3. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 160°. Serve warm.
  4. Point plus 8 3/4 cups serving

Blend dry pudding mix with corn syrup;gradually add evaporated milk and egg, stirring to blend well. I was hoping for a bit more of a pudding texture. It tasted great.was just too watery for me. Add in corn and mix well. Pour mixture into prepared casserole dish (Pam or vegan butter/margarine works great for this).
