Vada pav or wada pav is the common man's food in Mumbai and is a popular street food snack across whole Maharashtra. It is basically a savory slider of fried mashed potato fritters stuffed in a dinner roll. In its simplest preparation, bread pav or bun is horizontally cut from center, given a generous touch of green and dry garlic chutney and then stuffed with deep fried crispy and spicy potato fritter (batata vada) - Pav Vada prepared with this style is more popular in Maharashtra. Place all the shaped vada pavs on the baking tray with seam side facing down by leaving some space in between.

  1. For aloo filling Take a pan and heat 2 tsp oil and splutter mustard seeds - Add a pinch of hing and few curry leaves. - Also add garlic, chilli, coriander and saute well. - Mow add turmeric powder and stir - add boiled and mashed potato and salt too. - Mix well making sure all the spices are combined well with potato. - - Turn off the flame and let the mix cool
  2. For the dough. - - Take yeast and sugar in a bowl, add little warm water and mix well. - Set aside for 5-7 mins for the yeast to activate.
  3. Now take Flour, salt, 2 tblspn of oil in a large bowl and mix well. Add in the yeast mix in and mix well using a fork. Add little warm water as needed.
  4. Knead this to a soft dough. The dough has to be nonsticky. - Drizzle in 1 tblspn of oil and knead well. - Cover and set aside to rise for 1 hour.
  5. When the dough gets double in size give some more bunches
  6. Now divide the dough in three equal parts. And again divide them in two parts each.
  7. Make balls and roll them like chapati. I made 9” chapati from each, so got six chapatis
  8. Take on chapati on a baking paper apply some garlic chutney. Place little filling in the center.
  9. Now keep filling around the circumference giving a round shape as shown
  10. Cover it with the other rolled chapati and place a small bowl in the middle. See pic
  11. With the help of a sharp knife give cuts as shown keeping the center intact
  12. Now lift and twist each cut. This will look like a sunflower. Sprinkle some dry garli- coconut chutney masala. Put some sesame seeds and kalongi in the middle.
  13. Place the tray in pre heated oven for 20 minutes or till it’s done
  14. Enjoy hot vada paav stuffed sunflower bread with your dad
