  1. Start by blooming the yeast by adding the sugar and instant yeast into a ½ cup lukewarm water and set aside for 5 minutes.
  2. Next into a suitable mixing bowl add the dry ingredients; flour, fresh oregano, sumac, salt and mix to combine.
  3. Now add the wet ingredients onto the dry ingredients; egg, ½ cup oil, and the bloomed yeast liquid & mix to combine.
  4. Next add the olives and continue to mix adding water as needed while kneading to establish a soft non-stick dough.
  5. Then cover the dough and set aside for 1 hour to leaven and rise.
  6. After 1 hour lightly brush your oven pan with 1 tbsp oil & spread the dough into shape as desired, then set aside for an additional 30 minutes to leaven and rise a second time.
  7. Next bake the wild oregano dough in a preheated oven at 180°C or 350°F for 18-20 minutes or until the dough becomes a beautiful golden brown and fully baked.
  8. Finally pull the wild oregano dough from the oven and set aside to cool down, then cover with a clean kitchen cloth to keep the loaf soft.
