For mine, I'm gonna make it a little bit unique. Place the mushrooms, onion, carrots, and potatoes in a large crock pot and toss. Heat the olive oil in a large skillet over medium high. Add the roast and brown well on all sides. In a Dutch oven, heat a tablespoon or two of olive oil, and sear both sides.
