  3. Prepare 1 Green bell pepper diced

  5. Prepare 1 can Italian diced tomatoes
  6. Prepare 1 tsp Minced garlic

  8. Make ready Shredded Parmesan cheese

Instructions to make Mediterranean Vegetable Pasta:
  1. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large pan on medium then add garlic & zucchini. Cook for 3 minutes.
  3. Add chopped green pepper.
  4. Add mushrooms and cook until tender.
  5. Add can of tomatoes and cook until warmed through.
  6. Drain pasta then portion it on plates & top with generous spoonfuls of the vegetables. Sprinkle with the two types of cheese. Enjoy!
