Deep fry the coated okra in batches. Try to separate the clumps of okra as much as possible. Remove and place on absorbent paper to soak the excess oil. Deep fry curry leaves for a few seconds until crisp.

  1. heat oil in a saucepan or wok til it just starts to smoke.
  2. add cumin seeds & mustard seeds.when they start to crackle quickly add garlic ginger & chilies.fry til garlic light golden
  3. add onions & fry til golden.
  4. add all spices (except garam masala) & salt.add a sprinkle a lil water so that the spices dont burn
  5. then add all bhindi(okra) and fry til it loses its stickines & brite green color stirring lightly occasionaly
  6. caution:dont cover d pan
  7. lastly add garam masala mix once & serve
  8. tip:ginger & garlic ground in a mortar usin a pestle wil giv best results & take care while chopping chili & cracklin seeds
  9. cn b served with chapaties or rice or nan or tanduri rotis

Remove and place on absorbent paper to soak the excess oil. Deep fry curry leaves for a few seconds until crisp. Serve hot, spicy, crispy, golden brown okra garnished with fried. Shallow fried bhindi cooked in roasted besan and curry spices make a mouth watering Bhindi Fry (okra fry).
