  2. Take 1 1/2 Cups Warm Water
  3. Get 1 Packet Yeast (2 1/2 tsp)
  4. Take 1 Tsp Salt
  5. Prepare 1 Tbsp Brown Sugar
  6. Make ready 1 Tbsp Shortening (softened)
  7. Make ready 1 Tsp Butter flavoring (optional)
  8. Make ready 5 Cups Flour, General Purpose
  9. Take Soda bath
  10. Take 9 Cups Water
  11. Get 1/2 Cup Baking Soda
  12. Prepare Prebake
  13. Take 1 Egg White (Large Egg)
  14. Get Coarse Sea Salt
  15. Make ready Other things
  16. Prepare sheet Cookie
  17. Get Parchment paper
  18. Take bowls Several
  19. Make ready spoon Slotted
Instructions to make Pretzel Bites:
  1. Gather all the ingredients. Prep work is key to making this go smoothly.
  2. In a bowl, whisk together warm water and yeast. Let sit for a minute or so.
  3. Whisk in the salt, brown sugar, shortening, and butter flavoring (if desired.) Whisk until well blended. NOTE: while trying for an emulsion, it is perfectly fine to have broken up bits of shortening in the bowl.
  4. Using wooden spoon, or dough hook, gradually add flour 1/2 cup at a time, until the dough is not the consistency of paste, and has a slight spring to it.
  5. Turn out dough onto a lightly floured surface, and knead for three minutes.
  6. Lightly cover with cloth, and let rise 10 minutes.
  7. While dough is rising, prepare Soda bath on stove top and bring to a boil. Preheat oven to 400F.
  8. Once dough has risen, deflate and flatten it slightly. Cut into long strips. A pizza cutter works well at this point.
  9. Cut the long strips into smaller squares.
  10. Roll each square into a ball and set aside. Repeat until dough is used up.
  11. In batches of four or five, place dough balls into soda bath for around 30-45 seconds. Lift out with slotted spoon, drain, and set on parchment lined cookie sheet.
  12. Repeat step 11 until all dough balls are done.
  13. Wash each dough ball with egg white, and sprinkle generously with coarse sea salt.
  14. Bake for approximately 17 - 19 minutes, until deep golden brown with a hard shell crust.
  15. Remove. Cool. Enjoy!
