  23. Make ready 1/2 Cup Fried Besan Batter crumbs

At busy restaurants, potato vada pav burgers are formed and fried earlier in the day and then heated through again in hot oil before serving. Dip the potato mixture balls in the batter and deep fry in hot oil till golden brown in colour. Slit the pavs horizontally without cutting through, spread the red chutney on the inner sides of the pav and stuff it with hot vadas. They believed that the humble Vada Pav could stand tall among the burgers and pizzas of the world.

Steps to make Vada Pav /aloo chop burger:
  1. Heat a pan, add oil, zeera, chopped onion and saute few minutes and add crushed coriander, chilli flakes, green chilli crushed, turmeric powder,
  2. Potatoes and mix well.Now add salt, coriander leaves and mix it well. Keep it aside to cool.
  3. For batter - ● In a mixing bowl, add gram flour, turmeric powder, red chilli powder, salt to taste and required water as per the consistency and mix well.
  4. For vada pav - ● Heat oil and green chilli, garlic cloves and fry them well. - ● Heat a pan, add oil, peanut, garlic cloves, fried besan batter crumbs,
  5. Red chilli powder, salt to taste mix well and transfer it to a grinder and coarsely grind it. Chutney is ready.
  6. Now make a medium size ball of potato mixture and deep into the besan batter and fry them till golden brown.
  7. Serve with fried chilli and peanut chutney.
  8. Assembled vada pav.

Slit the pavs horizontally without cutting through, spread the red chutney on the inner sides of the pav and stuff it with hot vadas. They believed that the humble Vada Pav could stand tall among the burgers and pizzas of the world.
