  8. for perfect gravy, remove the meat and vegetables and let the remaining liquid reduce over high heat on the stove top. salt and pepper to taste

Whisk in the garlic and a pinch of salt. Season the sauce with salt and pepper. Drain the potatoes and return to the hot pot. Mash the potatoes with the cream and butter and season with salt, pepper and nutmeg. Heat oil in a large Dutch oven over medium-high heat.
