Stir-fry for a few minutes and add in broth, soy sauce, sesame oil, salt and white pepper. Bring to a boil and stir in the bee hoon.   8. Take Salt
  9. Prepare Chilli (optional)

  12. Prepare Shiitake mushroom

Certainly very appealing for those who enjoy Thai food. Well, it's probably based off a Singaporean rice vermicelli dish called Xing Zhou Bee Hoon which is a stir-fry of rice noodles with shrimp, pork and vegetables. The big difference is that it's not seasoned with curry powder. Heat oil in wok, stir fry shallots and garlic until shallots start to soften.

Instructions to make Stir fry bee hoon:
  1. Soak the bee hoon in warm water till soft then drain it. Don't need to boil it! This will give you a non soggy bee hoon.
  2. Stir fry garlic, curry leaves, chilli and koochye with sesame oil. U can put the curry leaves first so they will be drier.
  3. Put in Brussel sprout, shiitake mushroom or other veggie you like. Season with mushroom powder and pepper.
  4. Put in bee hoon, season with salt, pepper and mushroom powder.
  5. Make a hole in the center of the pan, put the egg and scrambled it. Please take note that egg will reduced the existing flavour. I usually scrambled it on the center.
  6. Taste it if the taste is to your liking and we are done!

The big difference is that it's not seasoned with curry powder. Heat oil in wok, stir fry shallots and garlic until shallots start to soften. Add (A) and bring to a gentle simmer. Then add the softened rice vermicelli and beansprouts, making sure the noodles are well coated in the mixture so that you have uniform colour and taste. Cook until the noodles have soaked up all the water and is of a dry consistency.
