  1. Make ready 3/4 cup Pearl Little Millet
  2. Make ready 1/2 cup chopped Carrot and beans mixed
  3. Prepare 1/4 cup shelled fresh peas
  4. Get 50 gms Soya Chunks soaked in hot water and softened
  5. Make ready 50 gms mixed nuts (almond, cashew, pistachio)
  6. Prepare 2-3 tbsps Ghee
  7. Make ready 1 medium sized Onion chopped
  8. Take 1/4 tsp Ginger powder
  9. Prepare 1/4 tsp Garlic powder
  10. Take 1/4 tsp Turmeric powder
  11. Take 1/2 tsp Kashmiri red chilli powder
  12. Prepare 1/4 tsp Cummin powder
  13. Make ready 1/4 tsp Coriander powder
  14. Make ready 1/2 tsp Garam masala powder plus a generous pinch
  15. Get as per taste Salt
  16. Take 1 pinch Saffron strands (optional)
  17. Get 1.5 cups Hot water
  18. Get Whole Garam masala
  19. Get 1 Bay leaf
  20. Prepare 1 Cinnamon stick small
  21. Take 2-3 Green Cardamom
  22. Make ready 3-4 Cloves
  23. Prepare 6-8 White peppercorns
  24. Take 6-8 Black peppercorns
  25. Prepare 1 generous pinch of Shaha jeera
  26. Prepare 1 Star Anise
  27. Take 1 mace
  28. Prepare For Garnishing (optional)
  29. Make ready As required Pomegranate
  30. Make ready As required Mint leaves
Instructions to make Veg Pearl Little Millet Pulav:
  1. Dry roast the Pearled Little Millet for about 3-5 minutes…keep aside.
  2. Heat ghee in a pot with thick bottom. Fry the nuts and take it out n keep aside. In the same ghee add the whole dry Garam masala. Once it crackles add the onion and saute. Then add all the ginger and garlic powder, turmeric & chilli powder, cummin & coriander powder along with salt and mix well, add about 1/4 cup of hot water too so that the masala/ spices doesn't burn.
  3. Add the carrot, beans and peas also and cook…if required add about 1/4 cup more water. After sometimes add the soaked soya Chunks too (discard the soaked water) and cook, add 1/4 cup more water if needed….add garam masala powder and cook for about 5 minutes. Then add in the dry roasted pearl little millet & saffron and mix well.
  4. Add in the 1& 1/2 cup hot water, sprinkle a generous pinch of Garam masala powder and add in the fried nuts, mix. Cover it nicely so that the steam doesn't escape…use aluminium foil too along with the lid and give DUM for about 15 minutes on medium flame (of the small gas burner). Then put off the flame and let it rest for 10-15 minutes more…open the lid and fluff up the Veg Pearled Little Millet Pulav. Serve hot! Garnish with pomegranate and mint (optional). Bon Appetite!!!
