  7. Take 1 medium onion chopped
  8. Prepare 2 Lawry's beef stew season packets (I just used the Great Value brand from Wal-Mart)
  9. Make ready 1 1/2 lb stew meat cubed (beef)
  10. Prepare 1 Water (put enough water to fill a large 7 quart crockpot)

Taste and add salt, if needed. This depends on how salty your beef broth was. In the drippings, brown beef in batches. Add the gravy to the slow cooker and evenly coat the vegetables and beef.

Instructions to make Vegetable Beef Stew (Crockpot):
  1. Put everything in the crockpot and cook on low for 6 to 8 hours. Serve with Jiffy cornbread.
  2. ***Another option is to cook on high for 1 hour and then turn to low for another 6 to7 hours, but this is optional.

In the drippings, brown beef in batches. Add the gravy to the slow cooker and evenly coat the vegetables and beef. The stew is finished when the vegetables and beef are tender. Place meat, corn, green beans, carrots, potatoes, tomatoes, soup mix, and salt and pepper to taste into the slow cooker; stir to combine. Stir in beef broth, tomato paste, Worcestershire, thyme, rosemary, paprika, caraway seeds and bay leaves until well combined; season with salt and pepper, to taste.
