I also nixed the mayonnaise and mozzarella that are in traditional spinach artichoke dip and used some milk instead because I needed this to be a bit more. I've tried a few Spinach and Artichoke dips from this site and I've loved them all but this is BY FAR my favorite! It is just perfect, and delicious! This is another fabulous version of the spinach/artichoke dip.

Instructions to make Spinach Artichoke Dip Pasta:
  1. In a large pot, bring 6 quarts of salted water to a boil over high heat. Add the rigatoni and cook until al dente, 8 to 10 minutes.
  2. Meanwhile, add the cream cheese, milk, mayonnaise, garlic powder, onion powder and red pepper flakes to a 12-inch high-sided saute pan over medium heat. Cook until a thick sauce forms, 5 to 6 minutes.
  3. When ready, drain the pasta and add it directly to the saute pan along with the artichokes, spinach and white wine. Season with salt and pepper, stir, and continue cooking until all the ingredients are hot, 1 to 2 minutes more. Stir in the Parmesan, then transfer to a serving platter and garnish with chopped parsley.

It is just perfect, and delicious! This is another fabulous version of the spinach/artichoke dip. However, I used sour cream instead of mayonnaise - much better! We use a bag of frozen. This dip is deliciously rich and creamy, perfectly cheesy, brimming with spinach and artichokes and it's always a crowd favorite!
